In the high Aude region, Mediterranean sunshine is tempered by the cooler nights characteristic of the Pyrénées foothills, creating wines of intensity, complexity and finesse. This beautiful and rugged environment is home to the Languedoc and Limoux AOPs, but the vineyards do not stop with the AOP geographical limits and it is from these outskirts that we have sourced some exceptionally interesting wines for the Les Volets range.
Here in the south of France, the Chenin Blanc is planted at altitude on the cooler, abrupt hillside slopes of clay and limestone in the foothills of the Pyrenees, it is one of the latest varieties to be picked, achieving full ripeness yet retaining a refreshing crispness. This ripe yet crunchy fruit gives this wine its freshness, vigour and spine as well as its luscious texture, which is further complemented and enriched from partial vinification and maturation in a combination of new and seasoned French oak. Bright and citrussy with herbal aromas which lead to a densely fruity yet dry mineral palate with great texture and a clean, lifted finish. Wonderful with warmly spiced dishes - Thai red curries and aromatic rice, spicy mango salads or even a fruity chicken tagine.
